Jiaozi Recipe: How to Make Traditional Chinese Dumpling


1. Introduction to Jiaozi

Jiaozi (饺子) are one of the most iconic Chinese dumplings, deeply embedded in Chinese culinary culture and history. Traditionally eaten during the Lunar New Year, jiaozi symbolize wealth and prosperity. Their half-moon shape is said to resemble ancient Chinese gold ingots.


2. Historical Background

  • Jiaozi originated over 1,800 years ago during the Eastern Han Dynasty (25–220 AD). The physician Zhang Zhongjing is credited with creating the first jiaozi to help treat frostbitten ears by wrapping medicinal herbs in dough.
  • Since then, jiaozi evolved from a medicinal food to a staple dish enjoyed across all regions of China, especially in the northern provinces.
  • Traditionally, families gather on New Year’s Eve to prepare jiaozi together, making it both a culinary and social event.

4. Basic Jiaozi Dough and Filling Recipe

Dough

  • 2 cups (260g) all-purpose flour
  • About 3/4 cup (180ml) water (adjust as needed)

Mix flour and water gradually to form a smooth dough. Rest for 30 minutes.


Filling (Classic Pork & Cabbage)

  • 200g ground pork
  • 1 cup finely chopped Napa cabbage (squeezed to remove water)
  • 2 green onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • Salt and white pepper to taste

Mix all ingredients thoroughly.


Shaping and Cooking

  1. Roll dough thin and cut into circles (~7 cm diameter).
  2. Place 1 tsp filling in center, fold dough over, and pinch edges to seal tightly.
  3. For boiling: cook in boiling water until dumplings float plus 2-3 minutes.
  4. For pan-frying (potstickers): fry in oil until bottom is golden, add water, cover, and steam until water evaporates.

Serve with soy sauce mixed with vinegar and chili.


5. Cultural Significance

Jiaozi are symbols of family reunion, luck, and prosperity. Their preparation is a communal activity that strengthens family bonds. In northern China, jiaozi is a must-have dish for Lunar New Year celebrations.
